Two misconceptions, corrected.

Do all heads discharge at once?

No. A sprinkler head operates individually when its own activation conditions are reached — discharge happens at the heads affected by the fire condition, per the system's design behaviour.

Do sprinklers detect smoke?

No. Sprinkler heads respond to heat conditions at the head, not smoke. Smoke detection belongs to the fire alarm system — the two work alongside each other.
